This curry is creamy and dreamy, excellent for a fast but cozy meal πŸŒΏπŸƒ The recipe is beneath! πŸŒΏπŸƒ
1 small onion finely chopped
eight oz. mushrooms sliced or quartered
1 tbsp oil
2 tsp garlic powder
1 tbsp curry powder
1 tbsp cumin
1 tsp chili powder
1-2 tsp coriander
1 tbsp + 1 tsp tomato paste
2 cups sliced tomatoes
1/four cup marinara or tomato puree
1 15 oz. can coconut milk
1 15 oz. can chickpeas
2 cups child spinach
Cilantro and pink chili flakes for serving

Add onions and oil to pan, prepare dinner for three min. Whereas these are cooking, you may reduce the mushrooms and add to pan. Cook dinner one other 7 min, stir often and add some water to stop burning if wanted. Add spices, tomato paste and sliced tomatoes. Cook dinner 2 min, stirring. Then add remaining elements besides the newborn spinach. For the coriander, you may add the 1 tsp and prepare dinner 5 min, style and add one other tsp for deeper taste. Cook dinner at light simmer for 10 min, partially coated. Add spinach, stir and prepare dinner one other couple min till wilted. Serve with chopped cilantro and pink chili flakes. πŸŒΏπŸƒπŸŒΏπŸƒ
