Udon with Veggies & Soy Curls πŸœπŸŒΏπŸƒ

four servings soy curls, re-hydrated
four servings noodles (I used 2 7.23 oz. packages pre-cooked udon noodles, discarding taste packet)
1/four bell pepper, thinly sliced
half of giant zucchini, chopped
1/four purple onion, finely chopped
three garlic cloves, minced
1 tbsp toasted sesame oil for cooking the above

Sauce:
6 tbsp soy sauce or sub tamari
2 tbsp agave
2 tbsp mirin
1 half of tbsp ginger paste
1 tsp garlic powder
1 tbsp chili garlic sauce
four tsp toasted sesame oil
1/four cup water
1 tbsp cornstarch + 2 tbsp water to dissolve

Add the sesame oil to a big pan, cook dinner re-hydrated soy curls on medium warmth for five minutes, stirring every now and then.

In the meantime, chop onion, garlic, peppers and zucchini. Add onion and garlic to pan, cook dinner for two min, then add peppers and zucchini. Stir, cook dinner one other 2 min.

Whereas veggies are cooking, cook dinner and drain noodles based on bundle instructions, and whisk collectively sauce in a bowl. Add sauce to pan with soy curls and veggies, stir, permit to bubble for a minute to thicken, then add cooked noodles. Stir and serve, high with sesame seeds and extra chili garlic sauce should you prefer it spicy!
