Pasta with Tomatoes, Olives & Spinach๐Ÿƒ๐ŸŒฟ

half lb. pasta
1/four cup olive oil
1 small onion finely chopped
four to five cloves garlic minced
1 pint cherry tomatoes sliced lengthwise
1 tsp kosher salt
half tsp pepper
1 tsp dried oregano
1 tsp dried basil
1 cup dry white wine
1/three cup pitted kalamata olives roughly chopped (some complete)
half cup marinated sun-dried tomatoes, chopped or thinly sliced
2 cups (packed) child spinach
2 tbsp capers (optionally available)
Juice of half lemon
2 tbsp (packed) recent parsley chopped

Prepare dinner pasta in salted water to al dente. In the meantime in a big pan, add oil and onion, prepare dinner round eight to 10 min till softened. Add garlic, prepare dinner 1 min. Add tomatoes and seasonings, stir, prepare dinner 5 min. Add wine, stir, let cut back by half (gently effervescent away). Add olives, sun-dried tomatoes and spinach. Stir and prepare dinner till spinach is simply wilted, round 2 min. Add cooked pasta, lemon juice, capers, stir. Serve and high with parsley. Drizzle with little bit of olive oil and extra lemon juice if desired. ๐ŸŒฟ๐Ÿƒ
