CREAMY VEGAN POTATO SAUSAGE SOUP

I swapped the beans for gnocchi🤫
RECIPE (serves 5-6)
half yellow onion, finely chopped
Four cloves garlic, minced
Three stalks celery, finely chopped
half tsp floor paprika
1 lb fingerling potatoes, halved (or Yukon gold potatoes)
Four half cups vegetable broth (I used water +1 tbsp higher than bouillon paste)
7 ounces vegan Italian sausage of alternative
half cup unsalted (uncooked or roasted) cashews
1 half cups filtered water
5 springs of thyme
6 ounces (about half a bag) frozen gnocchi, I used cauliflower gnocchi
2-Three cups chopped kale
Salt and pepper to style
Chili pepper flakes for garnish
1.In a bowl add half cup cashews, cowl with boiling water and let sit for 10 minutes.
2.In the meantime in a big pot over medium warmth add 1 tbsp further virgin olive oil, add onions and garlic and saute for Three minutes then add in celery, floor paprika and saute for a further 5 minutes.
3.Add halved potatoes into the pot the it with a pinch of salt and floor pepper. Rigorously pour within the broth. Carry to low-medium warmth.
4.Drain cashews and add to a blender ed by 1 half cups filtered water. Mix on excessive for 1 minute. Rigorously pour your recent cashew milk instantly into the pot. Let soup simmer for 15-18 minutes.
5.In the meantime in a pan crisp up (sliced) vegan sausage. Relying on what vegan sausage you get…you might or could not want oil within the pan. I added a little bit of oil and cooked my sausage for a pair minutes on both sides the seasoned with a pinch of salt and pepper. Take away from pan then add a tsp of oil and add gnocchi. Cook dinner ob both sides for a pair minutes till golden and cooked!
6.Add kale, then proceed to cook dinner, till the kale has wilted.
As soon as the soup has cooked for 20-25 minutes complete, and the potatoes are cooked, style and add salt to style then flip warmth off and serve! Prime off with sausage and crispy gnocchi! Add chili pepper flakes, crack of pepper, non-obligatory drizzle of fine high quality evoo and a sprig of thyme!
