30 minute Lentil Curry! 🥘 Cooked with candy potatoes, spinach, spices and served with rice, crispy chickpeas and flatbreads.

* 1 onion
* 2 cloves of garlic
* 2 teaspoons of curry
* three teaspoons of paprika
* 300g. Candy potatoes
* 250g. lentils (or 1 can)
* 600 ml. Water
* 1 vegetable broth, dice
* 1 tablespoons of soy sauce
* 1-2 tablespoons of purple thai curry paste
* three tablespoons of tomato puree
* 1 can of coconut milk
* 1 handful of spinach
* Juice from 1/2 lime
* 240g. Chickpeas, cooked
* 2 teaspoons of paprika
* Olie for frying
Wash and chop the candy potatoes in small items. Chop onions and garlic and cook dinner on a pan with some olive oil.
Add curry, paprika and candy potatoes. Wash and add lentils together with water and 1 vegetable broth (dice). Add soy sauce and purple thai curry paste. Let it simmer in 10 minutes till the potatoes and lentils are cooked. Add tomato paste and coconut milk. Stir till mixed and thick. Add a handful of spinach and lime juice. Let it simmer for five extra minutes.
Add the chickpeas on one other pan and cook dinner with paprika till crispy.
Serve the lentil curry with cooked rice, crispy chickpeas, flatbreads and contemporary lime.
