Lentil Tahini Salad
1 cup raw brown lentils
2 cups vegetable broth
1 tsp minced garlic
2 tbsp tahini or (1 tbsp olive oil for those who choose)
1 tbsp tamari
2 tsp apple cider vinegar
1/2 a small purple onion, minced
1/2 bell pepper, finely diced
1 head of broccoli, chopped into small items
Salt and pepper to style ⭐️
In a medium sauce pan add rinsed and cleaned lentils and vegetable broth and garlic. Carry to a boil then cut back to a simmer and permit to prepare dinner uncovered for about 10 minutes.
