Cozy Eggplant Tomato Stew

half of medium onion, diced
1 cup sliced mushrooms
1 medium eggplant, cubed (be happy to peel)

In a big pot, add onion and mushrooms and a pinch of salt. Sauteฬ till onions soften. Add in eggplant and Four tbsp of coconut milk and sauteฬ for about 3-Four minutes on medium warmth. Add in garlic, paprika, cumin, ginger, and pepper then stir to mix and permit to cook dinner till aromatic.
