Lemon cake

2 cups plain flour
1.5 tsp baking powder
Pinch of salt
1 cup sugar
1/Four cup desiccated coconut
3/Four cup coconut milk
half of cup dairy free yoghurt
1/Three cup lemon juice
1/Three cup oil
2 tbsp lemon zest

Frosting

half of cup vegan butter
2 cups icing sugar, sifted
1 tsp vanilla
1 tbsp lemon zest
2 tbsp lemon juice

Preheat oven to 180ยบc and grease a loaf pan. Add flour, baking powder, salt, sugar and coconut to a mixing bowl and stir nicely to mix. In a jug combine coconut milk, yoghurt and lemon juice. Let stand for a couple of minutes to thicken. Add oil and zest to the jug and stir nicely. Pour every thing into the dry substances and stir briefly to mix. The batter ought to be thick however pourable. Pour into loaf tin and bake for 45-50 minutes, till a chopstick comes out clear. Permit to chill totally.
