Jerk Spice Mix
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp smoked paprika
1/four tsp cayenne pepper
2 tsp dry thyme
2 tsp dry parsley
1/2 tsp cinnamon
1/four tsp nutmeg
1/2 tsp allspice
1/2 tsp crimson pepper flakes
1/four tsp salt
1/four tsp pepper

Mix spices in a jar and blend nicely earlier than utilizing.

Lentils
1 cup dry lentils (I used black lentils)
1/2 a crimson onion, diced
1 crimson bell pepper, diced
1 inch ginger, minced
5 cloves garlic, minced
1 15ozcan of diced tomatoes
1 1/2 tbsp jerk seasoning
2 tsp brown mustard
2 tsp maple syrup
three cups mushroom or vegetable broth
Juice of 1/2 a lime
Zest of 1 lime

In a medium pot at in onion and sauté till softened. Add in ginger, garlic and bell pepper and sauté till aromatic. Add in lentils, tomatoes, jerk seasoning, mustard and maple syrup. Stir to mix after which add broth. Deliver combination to a boil and cut back to a simmer. Cowl lentils and permit to prepare dinner for 25 minutes or till most of liquid is absorbed by lentils. Add in lime zest and lime juice, stir and take away from warmth to serve. ✨
