INGREDIENTS:
chickpea penne
Cherry tomatoes
Spinach
Onions
Broccoli
plant-based ricotta
Olive oil
Minced garlic
S&p

DIRECTIONS:
Steam cherry tomatoes, onion, & spinach in a pan with a splash of water. As soon as tender, add in olive oil & minced garlic & sauté.
Prepare dinner pasta & as soon as performed, drain & reserve 1/3- half of cup ish of the pasta water.
Put penne within the pan with the opposite components, decreasing the warmth to a simmer.
Add the ricotta & somewhat little bit of the water at a time, till desired consistency. Drizzle with olive oil & add salt & pep.
