Eggplant Stew 🔥

For those who havn’t tried this vegan recipe but, I’ve shared the recipe under! SO good and prepared in lower than 20 minutes! 🍲
* 100g. eggplant, sliced
* 1/2 onion, chopped
* 100g. carrots, shredded
* 1 tablespoon corn starch + water
* 1 tablespoon soy sauce
* 1 tablespoon maple syrup
* 1 tablespoon tomato pure
* Oil for frying
Slice the eggplant in small items, and shred the carrots.
Combine corn starch with some tablespoons of water. Add soy sauce, maple syrup, tomato pure and put aside.
Prepare dinner the onions on a heat pan coated with olive oil. Add the eggplant slices and cook dinner at excessive warmth till de eggplant will get a bit of crispy. Add the carrots too. Lastly add the sauce and 1 cup of water. Let it simmer at medium warmth 6-7 minutes till thick and creamy. Spice with salt and pepper. Serve with cooked rice and contemporary parsley.
